OH yummmmm, this looks so good. Corn bread is one of hubs favorites so will be making this for him. I might take a few nibbles also. Like that it doesn’t require much to make, my kind of food. Would be good dish to reheat for side dish for a meal when we bbq. It’s just us two so will maybe share this with our daughter/family. Looking forward to making this, so glad you shared recipe. Happy summer days

    Hello Holly,

Do you drain the regular corn first? Also, would a 13×9 pan work for this recipe? It looks delicious…thanks for sharing!

Hi Joy – Yes, I do drain the corn first, it would be way too watery. You could use a 13×9, it won’t be as thick of a casserole, but still good. Hope you enjoy! Thanks so much for stopping by! Hugs, Holly

Someone made this at a funeral I attended on Saturday and my family went nuts over it. It was amazing. I googled the recipe and my mom is going to try her hand at it this weekend. So addictive.
